Low-Calorie Post-Workout Recipe: Yakitori Pork and Shiitake Kebobs

Pork, green onions, red bell peppers, and shiitake mushrooms on a stick -- what could be better?

How about the fact that this yakitori pork and shiitake kebobs recipe clocks in at just 262 delicious calories per serving? It's a low-calorie recipe perfect for your post-workout summer barbecue.   • 2 center cut, boneless pork chops with fat trimmed (1 lb. total weight)
  • ¼ cup soy sauce
  • ¼ cup pineapple juice
  • 2 tablespoons sake
  • 1 tablespoon mirin
  • 2 tablespoons honey
  • ¼ teaspoon ground ginger
  • 2 cloves garlic, smashed but kept whole
  • 1 red bell pepper, cut into 12 (2-inch pieces)
  • 2 green onions, cut into 12 (2-inch pieces)
  • 12 medium-sized fresh shiitake mushrooms, stems removed
  • 4 metal or wooden skewers


Serves four (makes four skewers).

Cut each pork chop into 8 pieces, for a total of 16 pieces. The best way to do this is to cut the pork chop lengthwise and then cut each long piece into four pieces. Set aside.

In a medium-sized bowl, add the soy sauce, pineapple juice, sake, mirin, honey, ginger, and garlic to the bowl and mix. Add the pork chop pieces and mix to coat the pork. Cover and refrigerate for 1-2 hours.

If you are using wooden skewers, you should soak them in water for 30 minutes before using.

Heat a barbecue grill to medium heat. Remove the pork from the marinade and pat dry. Remove the garlic cloves from the marinade and discard. Put the marinade in a small sauce pan and heat to simmer. Simmer until the marinade is reduced by two-thirds and it has a syrupy consistency. Set aside.

Meanwhile, start adding the ingredients to the skewers. Each skewer should have 4 pieces of pork, 3 pieces of green onions, 3 shiitake mushrooms and 3 pieces of red bell pepper. I usually start skewering with the meat first. You should end up with four skewers.

Grill the skewers with the lid closed, turning over once, until the pork registers 160 degrees F (slightly pink), about 4 minutes on each side. Remove from the grill and lightly brush with the reduced marinade. Serve with a side green salad.
